Mashed Potato French Toast

Breakfast is often referred to as the most important meal of the day, and for good reason. It sets the tone for your entire day and provides you with the energy and nutrients you need to tackle your morning with ease. If you’re looking for a new twist on the classic breakfast staple of French toast, look no further than this delicious mashed potato French toast recipe!

Ingredients:

Preparing the Mashed Potatoes:

The first step in this recipe is to prepare the mashed potatoes. While you can certainly use leftover mashed potatoes from a previous meal, you can also make fresh mashed potatoes specifically for this recipe. To make fresh mashed potatoes, simply peel and chop 4–5 medium-sized potatoes, boil them in a pot of salted water until they are soft, and then mash them with a potato masher or ricer. Add salt and pepper to taste, and set the mashed potatoes aside until they are needed later in the recipe.

Making the Batter:

Next, it’s time to make the batter for the French toast. In a large mixing bowl, whisk together the eggs, milk, flour, and a pinch of salt and pepper until well combined. Set the bowl aside.

Mixing the Mashed Potatoes and Batter:

To the egg mixture, add the 2 cups of mashed potatoes and mix until well combined. This mixture will be used to coat the slices of bread, which will then be fried to create the French toast.

Slicing the Bread:

Take 8 slices of bread and cut them into triangular shapes. This will give the French toast a unique and interesting appearance, as well as make it easier to dip into the batter mixture.

Dipping the Bread into the Batter:

Take each slice of bread and dip it into the batter mixture, making sure it is fully coated. Be sure to let the excess batter drip off before cooking the bread.

Cooking the French Toast:

In a large skillet, melt 2 tbsp of butter over medium heat. Once the butter is melted and hot, place the coated bread slices into the skillet and cook for 2–3 minutes on each side, or until they are golden brown. Repeat this process until all of the slices of bread have been cooked.

Plating the French Toast:

Once all of the slices of French toast have been cooked, place them on a plate and serve with your favorite toppings, such as syrup, butter, fruit, or whipped cream.
